Bacon, walnut and rocket salad


Create a salad base with fresh washed rocket leaves, sliced baby tomatoes and snow pea sprouts. You could also add a sliced hard-boiled egg to really beef this up.
Fry a rasher or two of bacon in a non-stick pan until crispy. Add a splash of olive oil if necessary, and then a handful of walnuts. Toss and fry until the walnuts are fragrant but not burnt. You can if you like now take out the bacon, chop it and add it to the salad.
Otherwise, just turn off the heat, pour a small splash of white wine vinegar into the hot pan, let it sizzle and deglaze the pan, then just pour the lot, nuts, bacon and all over the salad. Toss gently and let it sit for a minute before eating.
