Ultra-lazy Italian tomato soup



Mmm. Fresh tomato soup. Brilliant for lazy summer evenings.






Ultra-lazy Italian tomato soup

  • About 1.5 kg fresh tomatoes, roughly chopped
  • Bunch of celery, trimmed and roughly chopped

  • Few cloves crushed garlic

  • Splash of olive oil

  • Good salt and pepper

Throw all ingredients into a big stockpot and cover with water. Bring to the boil and then let it simmer for a few hours. When it's reduced by about a third, you should be right to go. Optionally, throw in some chopped basil or flat-leaf parsley to serve. This is mega-fab if you find some chewy ciabatta or similar, lightly toasted to serve with, or you can also turn this into a version of Italian Bread Soup if you have stale bread ripped into small cubes, fried lightly in olive oil so it toughens up and hardens, then put some cubes into the bottom of your soup bowl and ladle soup over the top.
