Mushrooms, onions and gravy on ciabatta
After the success of my roast lamb, I had to find a way to use up the few spoonfuls of leftover gravy. Also left over were a sprinkling of caramelised onions. So for a Sunday breakfast, I threw some button mushrooms into a pan, added the cold gravy and onions, cooked for a few minutes until the mixture began to stick, and poured it over some fresh ciabatta (untoasted). On top I put a big handful of roughly-chopped Italian parsley, salt and pepper. So tasty!
