Homemade pizza sauce


I put half a kilo of chopped fresh tomatoes, some olive oil, 2 cloves of grated garlic, a sprig of rosemary, a splash of Tabasco, 2 teaspoons of white wine vinegar, a teaspoon of sugar, a cup of water and half a teaspoon of salt in a saucepan and simmered for about an hour. Then I forced the lot through a sieve.

The sauce was smooth and flavoursome. I thought it was nice to have a pizza sauce that wasn't so very thick and overpowering.
