Pavé d’Affinois

Mmmm, pavé. Made from fresh cow. Fresh cows' milk, I mean. You can buy it from the New Farm Deli. They also have the Fromager des Clarines cheese. The pavé is smooth and creamy inside, with a rough, tough, solid and tangy exterior.

Even though the cheese is made from pasteurised (read: wimpy, pansy, girls') milk, is there anything better than a good strong French cheese on a nice crisp water cracker? This is my new favourite cheese. Leaves brie and camembert weeping in the shade.
